Ingredients

Servings
  • 12 ounces Pasta of Choice
  • 12 ounces imitation crab meat or surimi
  • 1 cup frozen peas thawed
  • 1 red onion diced
  • 2 celery sticks finely diced
  • 1 red bell pepper seeded and diced

Dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons whole grain or dijon mustard
  • 1 tablespoon sriracha or hot sauce
  • 1 1/2 tablespoons apple cider vinegar
  • kosher salt and pepper to taste

Instructions

  1. Boil the 12 ounces pasta of choice according to package directions. Drain and run through cold water, then set aside in a bowl.
  2. Cut the 12 ounces imitation crab meat or surimi and veggies ( 1 red onion, 2 celery sticks, and 1 red bell pepper) and add them to the bowl with the cool pasta and 1 cup frozen peas.
  3. To a small jar add all the dressing ingredients (1/4 cup extra-virgin olive oil, 2 tablespoons whole grain or Dijon mustard, 1 tablespoon sriracha or hot sauce, 1 1/2 tablespoons apple cider vinegar, and Kosher salt and pepper). Shake well to emulsify, then pour over the salad.
  4. Toss to combine and enjoy!

Notes

  • Store leftovers in the refrigerator for up to 3 days in an airtight container. The pasta will continue to absorb the dressing as it sits, so you may need to refresh the salad with a bit more olive oil.
  • You may swap the crab meat with cooked shrimp.
