Cranberry Pork

Cranberry Pork is pork sautéed in a sweet, tart, tangy, spicy sauce made with cranberries, red wine, and dijon mustard.

Ingredients

  • 2 tablespoons oil divided
  • 1-1/2 pounds pork chops cubed
  • salt and freshly cracked black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried sage
  • 1/2 onion chopped
  • 1 clove garlic minced
  • 1/2 cup red wine
  • 1 cup low sodium chicken broth
  • 1 cup fresh cranberries
  • 1/2 cup brown sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce optional - adjust amount to taste

Instructions

  1. Season the pork with salt, pepper, onion powder, garlic powder, and sage. In a large skillet over medium high heat add 1 tablespoon oil. Brown the pork. Turn to brown each side. Remove pork. Set aside.
  2. Add more oil if needed. Add chopped onion and cook until soft. Add garlic and cook for about 1 minute. Add red wine and cook for about 2 minutes. Add chicken broth. Then add cranberries, brown sugar, mustard, and hot sauce. Simmer for about 5 minutes.
  3. Add pork back into the pan with the sauce. Stir pork and cook until the meat is fully cook and the sauce has glazed the pork.
