  • 2 cucumber sliced into rounds, English
  • 1 small red onion thinly sliced
  • 2 cloves garlic minced
  • 1/2 cup sour cream
  • 1/2 cup yogurt plain, Greek
  • 1 tablespoon lemon juice fresh
  • 1 tablespoon dill chopped, fresh
  • 1/4 cup green onions
  • 1/2 teaspoon salt or to taste, sea salt
  • 1/8 teaspoon black pepper or to taste

Garnish:

  • green onion fresh
  • dill fresh

Instructions

  1. In a small bowl, combine sour cream, greek yogurt, lemon juice, minced garlic, and dill. Add salt and pepper to taste. Stir and set aside.
  2. Slice cucumbers into thin rounds or half rounds if using larger cucumbers. Place in a large mixing bowl.
  3. Add thinly sliced onion. Just before serving stir the dressing into the salad and mix to coat the cucumbers.
  4. After adding the dressing, the salad can stay at room temperature for about 2-3 hours, after which it needs to be refrigerated.
  5. Garnish with chopped green onions and dill before serving. The salad is best served chilled, so refrigerate it for 30 minutes to an hour before serving.
