Creamy Rocket and Watercress Soup in the Multicooker Redmond

This light, refreshing and creamy rocket and watercress soup.

Ingredients
- 1 tbsp olive oil
- 1 large onion finely chopped
- 1 large potato (200g) cut into very small cubes
- 2 garlic cloves minced
- 1 litre (4 cups) hot vegetable stock (or chicken stock if not vegan)
- salt
- 50 ml double cream or dairy free milk (if vegan)

Instructions
- Add the olive oil and onion to the Multicooker Redmond and set it to fry for 15 mins with the lid open.
- Soften the onions for 8 mins before adding in the potato and garlic and frying for the rest of the time stirring occasionally.
- When the fry programme finishes, set the Multicooker to boil for 15 min, add in the hot stock, watercress and rocket and close the lid and cook until the programme finishes.
- Transfer the soup into a bowl and allow to cool, then whiz with a hand held blender and add in salt and cream before serving.
