Description
This recipe begins with heating grapeseed or a similar neutral oil in a skillet, then sautéing diced onions and shallots until lightly browned. Bell pepper, zucchini, and shiitake mushrooms are added and browned on high heat to develop flavor and retain slight crispness. Precooked stir-fry noodles are then mixed in.
A sauce made from mirin and soy sauce is incorporated followed by the addition of tahini which lends a creamy, nutty dimension to the dish. Chili paste adds a mild spicy note tailored by the chosen spicy oil or paste.
Once combined, the noodles are garnished with green onions and sesame seeds, providing fresh, bright hints and a delicate crunch. The resulting dish has a balanced richness and layered textures, ideal for a satisfying vegetarian meal or side option.
Ingredients
- 1 tbsp grapeseed oil peanut, or canola oil
- 1 onion diced, large
- 1 shallot diced
- 1 bell pepper diced
- 1 zucchini diced
- 12 oz shiitake mushroom diced
- 7 oz stir fry noodles precooked
- 2 tbsp mirin or rice wine
- 2 tbsp soy sauce
- 2 tbsp tahini
- 1-2 tsp chili paste fire oil, or other spicy oil/paste/herb
- sesame seed to garnish
- green onion to garnish
Instructions
- In a large, heavy skillet, heat oil on medium high.
- Add onion and shallot, tossing to prevent burning.
- After 2 minutes on high, onion and shallot should be lightly browned.
- Add peppers, zucchini, mushrooms, stir on high heat and lightly brown.
- Add noodles to pan, toss.
- Add sauce and stir.
- Stir in tahini and mix well.
- Sprinkle green onions and sesame seeds over noodles, plate immediately.
