Plantain Banana in Syrup (Minatamis na Saging)
Description
This traditional Filipino dessert involves boiling a brown sugar syrup with water and optional vanilla and salt until slightly thickened. Plantain bananas cut diagonally are added and simmered until soft and infused with the syrup’s sweetness. Tapioca pearls can be stirred in near the end of cooking for added chewiness. After cooking, the dish is cooled or chilled, then served over ice and topped with evaporated milk, which balances the syrup’s richness and adds creaminess.
The dish’s texture is tender but holds the fruit shape, and the syrup is glossy and sweet. It is often enjoyed as a refreshing treat, especially in warm weather.
