Easy Cassava Cake Recipe

Easy Cassava Cake combines grated cassava with coconut milk, condensed and evaporated milk, sugar, and egg yolks into a dense, moist cake topped with a rich custard made from similar milks, egg yolks, and flour. The cake is baked until set, then topped and baked again for a golden layered finish. Its creamy texture and tropical coconut flavor make it a comforting dessert that benefits from chilling overnight to enhance its firmness and flavor melding.

Description

This Easy Cassava Cake centers on grated cassava combined with desiccated coconut alongside a blend of condensed milk, evaporated milk, coconut milk, sugar, and egg yolks. The mixture is poured into a greased baking dish and baked until firm and cooked through. Following this, a custard topping created from similar milks, egg yolks, and a flour slurry is spread on top, then baked again until the custard sets and develops a golden surface.

The cassava’s natural starchiness gives the cake a moist yet sturdy texture, while the coconut and milks contribute richness and subtle sweetness. Baking in two stages creates a layered effect with a creamy custard finish contrasting the denser base. The aroma of coconut is mild but distinct throughout.

The cake is often best enjoyed after chilling overnight, allowing it to firm up and for flavors to harmonize further. This makes it suitable for preparing ahead of serving. It can be eaten warm but is typically preferred cold from refrigeration.
