  • 2 chicken breast can buy thin-sliced chicken breast aka chicken cutlets, about 12 ounces each, sliced into chicken cutlets
  • 1 tablespoon mayonnaise (can substitute sour cream or Greek yogurt)
  • ½ cup panko breadcrumbs
  • 3 tablespoons Parmesan Cheese grated
  • ¾ teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 425°F. Spray a baking sheet with nonstick cooking spray.
  2. Mix the panko breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, salt, pepper, and olive oil together in a bowl.
  3. Spread a thin layer of mayonnaise on top of each piece of chicken.
  4. Press the mayonnaise-coated side of the chicken into the breadcrumb mixture so that the breadcrumbs stick to the chicken. Place the breaded chicken breasts on the baking sheet. Spoon any leftover breadcrumbs on top.
