Crispy Broccoli Sweet and Spicy Sesame Tahini Noodles

This recipe combines tender rice noodles with crisp-tender broccoli coated in a sweet, spicy sauce made from tahini, soy sauce, brown sugar, and chili paste. The broccoli is cooked until slightly charred and golden, creating a pleasing contrast to the creamy, tangy sauce that binds the noodles and vegetables together. Sesame oil and toasted sesame seeds add nuttiness, while red pepper flakes can be added for extra heat.

Description

The "Crispy Broccoli Sweet and Spicy Sesame Tahini Noodles" recipe starts with cooking broccoli florets in toasted sesame oil until they become tender but still crisp, with golden, slightly charred spots that add texture and flavor. Alongside, rice noodles are prepared and drained. A sauce is made by whisking together tahini, soy sauce, brown sugar, rice vinegar, fresh ginger and garlic, hot chili paste, and water to thin it, resulting in a creamy, sweet, tangy, and spicy dressing.

The cooked broccoli and noodles are combined and tossed in the sauce, coating both elements evenly. The tahini provides creaminess balanced by soy and brown sugar sweetness, while chili paste adds a controlled heat. Toasted sesame seeds garnish the dish, adding crunch and nuttiness. Red pepper flakes can be added to increase spice according to taste.

This dish works well as a vegetarian main or side, offering both satisfying textures and a complex sweet-spicy flavor profile. It can be customized using different hot sauces if chili paste is unavailable.

Ingredients

Servings
  • For the sweet and spicy sauce:
  • 3 tablespoons soy sauce low sodium
  • cup tahini we use Soom
  • 2-3 tablespoons brown sugar or sub coconut sugar or honey
  • ½ tablespoon rice vinegar
  • 1 tablespoon ginger fresh grated
  • 2 cloves garlic minced
  • 1-2 tablespoons hot chili paste such as sambal oelek
  • 2-4 tablespoons water to thin the sauce
  • For the broccoli:
  • 1 tablespoon sesame oil preferably toasted sesame oil
  • 1 broccoli large head, chopped into florets (about 4-5 cups
  • salt freshly ground
  • black pepper freshly ground
  • For the noodles:
  • 10 ounce rice noodles or sub spaghetti or linguine
  • For serving:
  • red pepper flakes if you want it extra spicy
  • sesame seeds toasted

Instructions

  1. First make your sweet and spicy sauce: in a medium bowl, whisk together the soy sauce, tahini, brown sugar, rice vinegar, ginger, garlic, hot chili paste and water together. You want the sauce to be pourable and fairly thin, like a salad dressing, it will thicken as it sits a bit. Set aside.
  2. Add 1 tablespoon sesame oil to a large pot and place over medium heat. Add in broccoli florets, season with a little salt and pepper and cook, stirring frequently, for 6-8 minutes or until broccoli is slightly tender but still has a bite. The broccoli should get somewhat charred and slightly golden and crispy in places.
  3. While the broccoli is cooking you can make your rice noodles according to the directions on the package. Then drain and set aside.
  4. Once the broccoli is done cooking, you can add in your rice noodles and the tahini sauce. Toss well to combine and coat the noodles and broccoli with the sauce. Garnish with sesame seeds and extra red pepper flakes if you want it a little spicier. Serves 4.

Notes

  • If chili paste is unavailable, substitute with your favorite hot sauce for heat and flavor.
  • To achieve optimal broccoli texture, cook until just tender with some charred edges, avoiding overcooking.
  • For a thinner sauce consistency, adjust water quantity when mixing the tahini dressing.
  • Try adding extra red pepper flakes to increase spiciness according to preference.
