Crispy Butter Chicken
Description
This recipe uses boneless skinless chicken breasts coated in a mixture of beaten eggs and cracker crumbs seasoned with garlic salt and black pepper. Arranged in a baking dish, the chicken breasts are topped with small chunks of butter which melt during cooking, helping to crisp the coating and add richness. Baking at 375 degrees Fahrenheit for 30 to 35 minutes allows the chicken to cook through while the coating develops a golden crispness.
The cracker crumb coating provides a different texture than traditional breadcrumbs, offering a buttery and slightly flaky exterior. The use of butter in the baking dish ensures moisture and a flavorful crust without frying. This method is straightforward and yields tender, juicy chicken breasts with a satisfying crispy outside.
