Crock Pot Beef and Broccoli
Description
The beef is slow-cooked on low heat for several hours in a mixture of beef broth, low sodium soy sauce, brown sugar, sesame oil, and minced garlic. This long cooking time helps tenderize the meat and infuse it with rich flavor. After the beef is cooked, a slurry of cornstarch and water is added to thicken the sauce. Frozen broccoli florets are then stirred in and cooked until tender yet crisp.
The final texture features soft, flavorful beef slices coated in a glossy, thickened sauce contrasted with bright green broccoli. The preparation in a crock pot allows for unattended cooking with a gradual melding of flavors. The balance of salty soy sauce, sweetness from brown sugar, and slight toastiness of sesame oil supports the beef's meaty taste.
Serving this beef and broccoli over freshly cooked white rice makes it a complete meal. The rice helps soak up the sauce and rounds out the dish. It suits a convenient family dinner, with flexibility to add other sides or adjust ingredients.
