Description
This chili begins by mixing an array of ingredients including kidney and black beans, chopped onion, green chili peppers, frozen corn, tomato sauce, and canned diced tomatoes with chilies in a slow cooker. Spices such as cumin, chili powder, oregano, paprika, garlic and onion powders, salt, pepper, and a taco seasoning packet create a deep, layered flavor profile.
The chicken breasts are nestled into the mixture and cooked on low for 8 to 10 hours or high for 4 to 6 hours, allowing the meat to become tender and absorb the spices. The chicken is removed, shredded, then stirred back into the chili to combine fully.
The chili can be garnished with fresh cilantro and additional toppings as desired. The long cook time in the crock pot enhances the melding of spices and ingredients while producing a hearty, warming dish suitable for cooler weather or crowd-serving.
Ingredients
- 1 onion chopped, small
- 1 1/2 tablespoons cumin
- .5 oz can black beans drained
- 1 1/2 tablespoons chili powder
- .5 oz can kidney bean drained
- 1/4 teaspoon garlic powder
- ounce can tomato sauce
- 1/4 teaspoon onion powder
- 10 oz corn kernels frozen, package
- 1/4 teaspoon oregano dried
- 2 cans diced tomatoes with chilies 10 ounces each
- 1/2 teaspoon paprika
- 4 oz green chili peppers chopped, chopped, canned
- 1 teaspoon kosher salt
- 1 packet taco seasoning see below, reduced sodium or homemade
- 1/2 teaspoon black pepper
- 1 tbsp cumin
- 1 tbsp chili powder
- 24 oz chicken breast boneless, skinless, quantity 3
- 1/4 cup cilantro chopped, fresh
Instructions
- Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well.
- Nestle the chicken in to completely cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.
- Half hour before serving, remove chicken and shred.
- Return chicken to slow cooker and stir in.
- Top with fresh cilantro and your favorite toppings!
