Ingredients
- 4-6 boneless pork chops
- 1/2 cup soy sauce
- 1/3 cup brown sugar
- 1/3 cup BBQ sauce (Use your favorite)
- 3 dashes hot sauce (like Tabasco or Sriracha - OPTIONAL)
- 1 (15-ounce) can pineapple slices with juice, divided
- 1 red pepper sliced
- 3 tablespoons rice vinegar or apple cider vinegar
- 2 tablespoons minced garlic
- 1 tablespoon freshly grated ginger
- 1/4 cup water
- 3 tablespoons cornstarch
- For servings: rice green onion, sliced
Instructions
- Prepare the Sauce: In a medium bowl, whisk together the soy sauce, brown sugar, BBQ sauce (or ketchup), pineapple juice (from the canned pineapple), rice vinegar, minced garlic, and grated ginger.
- Assemble the Crockpot: Place the pork chops in the bottom of the slow cooker. Pour the prepared sauce over the pork chops, ensuring they are well coated.
- Thicken the Sauce: In a small bowl, whisk together the water and cornstarch until smooth. Stir the mixture into the crockpot. ( You can add now, or before the last 30 minutes of cook time, either is fine.)
- Add Vegetables & Pineapple: Scatter the sliced red pepper and half of the pineapple slices over the pork chops. Reserve the remaining pineapple slices for later.
- Slow Cook: Cover and cook on low for 5-6 hours or high for 2.5-3 hours, until the pork chops are tender. Check for doneness early so the meat doesn’t dry out.
- OPTIONAL: Final Touches: Add the remaining pineapple slices on top and let them warm through for the last 10 minutes. Or just add as you plate the meat.
- Serve: Plate the pork chops over cooked rice, spooning the sauce and vegetables over the top. Garnish with sliced green onions. Enjoy!
