Description
This Crock Pot Italian Meatball Soup begins with combining frozen beef meatballs, canned crushed tomatoes and tomato sauce, beef broth, diced onion, celery, and carrots, plus Italian seasoning, salt, and pepper in a slow cooker. The ingredients cook together on low for 6-8 hours or high for 3-4 hours, allowing the flavors to develop fully. Near the end of cooking, ditalini pasta is stirred in and cooked until tender over 15-30 minutes, depending on the heat setting. The soup is served garnished with fresh chopped parsley and shredded Parmesan cheese. The combination of juicy meatballs, herb-infused broth, and soft pasta creates a wholesome soup well suited to colder days or any time a filling meal is desired.
Ingredients
- 1 beef meatballs 24 oz, frozen, package
- 1 crushed tomatoes 15 oz, canned
- 1 tomato sauce 8 oz, can
- 6 cups beef broth
- 1/2 onion Diced
- 2 celery Diced, stalks
- 2 carrot Peeled and Diced
- 2 tsp Italian seasoning
- 1 tsp salt
- 1 tsp black pepper
- 1 1/2 cup ditalini pasta
- parsley Chopped, fresh
- 1/2 cup Parmesan Cheese shredded
Instructions
- Place all the ingredients except for the pasta, parsley and parmesan cheese in a crock pot.
- Stir and cover.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in the Pasta for the last 30 minutes if cooking on low and 15 minutes if cooking on high.
- Serve topped with the chopped parsley and shredded parmesan cheese.
