Ingredients

  • 1 can Kidney Beans 15 oz (rinsed and drained)
  • 1 can black beans 15 oz (rinsed and drained)
  • 1 can great northern white beans 15 oz (rinsed and drained)
  • 1 medium zucchini peeled and chopped
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 can green chilies (4 oz)
  • 1 can diced tomato 14.5 oz
  • 1 can tomato paste 12 oz
  • 2 teaspoon minced garlic 
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 2 cups water

Instructions

  1. Add everything in the crock pot. Stir to combine all the ingredients.
  2. Cook on low for for 4-6 hours or cook on high for 2-3 hours.
  3. Serve warmed topped with your favorite chili toppings and enjoy!

Notes

  • Refrigerate the leftovers in an air tight container for up to 5-7 days.  Add more water when reheating as the beans will soak up the liquid as it sits. 
  • If you like spicy chili, add 1 jalapeño (deseeded and diced) to give this chili a little kick!
