Description

  • 2 tablespoons olive oil extra virgin , optional
  • 1 large onion peeled
  • 2 large carrot peeled and sliced or chopped
  • 2 talks celery optional, chopped
  • pound chicken breast with skin and bones (2 or 3 breasts
  • 2 tablespoons Vegeta or 2 tsp chicken base, or 1 chicken bouillon cube
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 8 cups water
  • 2 bay leaf
  • ½ teaspoon rosemary dried, optional
  • 4 ounces egg noodles wide dry (2 cups)
  • ¼ cup parsley fresh, chopped for garnish

Instructions

  1. Add the oil, onion, carrots, chicken, celery, Vegeta, salt, pepper, water, bay leaves and rosemary to your crockpot. Cook on low for 8 hours or 4 hours on high.
  2. Remove the onion and take out the chicken. Remove the skin and bones from the chicken and shred with two forks.
  3. Add the chicken back to crockpot and add egg noodles. Cook for another 1 hour on high or until noodles are cooked.
  4. Garnish with parsley.

Notes

  • Add the noodles only during the last hour of cooking to avoid mushy texture.
  • For a creamy variation, stir in heavy cream about 15 minutes before the noodles finish cooking.
  • Vegeta seasoning can be replaced with chicken base or chicken bouillon cube as alternatives.
