Description
The Croque Madame begins with making a béchamel sauce by cooking butter and flour into a roux, then gradually whisking in milk until smooth and cooked through. Dijon mustard is added for flavor, along with salt and white pepper. The sandwich is assembled by layering ham and grated Gruyere on toasted bread slices, then briefly placed under the broiler to melt the cheese. Another bread slice is added on top, covered generously with béchamel sauce, and broiled until golden brown.
The crowning element is a fried egg placed on each sandwich just before serving, adding a creamy texture and a rich finish. This dish combines salty ham, nutty Gruyere, and the subtle kick from mustard in the sauce, all melded together by gentle broiling.

Ingredients
- 2 tablespoons butter
- 2 tablespoons flour
- 1-1.5 cups milk
- 1 teaspoon Dijon mustard
- salt to taste
- white pepper to taste
- 8 lices bread toasted
- 12 lices ham I used Gypsy ham
- 2 cups gruyere cheese grated
- 4 egg fried to your preference
Instructions
- Pre-heat the broiler of the oven.
- In a small saucepan, melt the butter then whisk in the flour to make a roux.
- Slowly pour in the milk while continuously whisking to create a smooth, rich sauce.
- Turn down the heat and allow to cook gently, whilst stirring, until the sauce is cooked through.
- Add the mustard and season to taste.
- Assemble the sandwiches by dividing the ham and cheese between 4 slices. Place in the oven, allowing the cheese to melt then top with the remaining slices of bread and a generous spoonful of bechamel sauce before returning to the oven.
- Allow to grill until golden brown then remove from the oven and top with the fried eggs.
- Serve immediately.
