Ingredients
- 2 large cucumbers
- 1 orange
- 2 tbsp olive oil
- 4 slices white bread
- 1 tsp butter
- 1 red onion
- 150 gr feta cheese
- salt and pepper
Instructions
- Using a mandoline, thinly slice the cucumber.J
- Julienne the red onion.
- In a pot with high sides, cook the sliced red onion with white vinegar over medium heat.
- Once all the vinegar has evaporated, let the red onion cool.
Dressing Preparation
- Squeeze a whole orange into a glass bowl.
- Season the orange juice with salt and pepper.
- Slowly add the olive oil to the orange juice while continuing to stir.
