Curried Pasta Salad

A simple and tasty pasta salad, similar to the one sold in Aussie supermarkets.

Ingredients
- 2 ½ cups pasta spirals 230 grams (uncooked measurements)
- ⅓ cup mayonnaise
- ⅓ cup Greek yoghurt
- 1 teaspoon curry powder
- 1 pinch turmeric powder
- ⅓ cup sultanas
- 1 carrot, grated finely
- ½ capsicum, finely chopped
- salt and pepper (to taste)
- 1 sprig parsley (to garnish)

Instructions
- Boil pasta until just cooked. Drain and allow to cool.
- Add sultanas, carrot and capsicum to pasta and stir to combine.
- Combine mayonnaise, yoghurt, curry powder and turmeric powder in another bowl and stir well to combine. Pour over pasta and other ingredients and stir well to combine.
- Season with salt and pepper and garnish with parsley. Place in fridge and serve cold.
