Dark Beer Chicken Wings with Mashed Potatoes & Spicy Tomato Sauce
Description
The chicken wings are prepared by seasoning with salt and pepper, coating with honey and dark beer, then roasting covered and uncovered to cook through and caramelize. The dark beer adds depth and subtle bitterness, while honey provides sweetness and glaze to the wings.
Mashed potatoes accompany the wings, prepared by boiling large potatoes until tender, then mashing with butter and milk to achieve a smooth and creamy consistency that complements the chicken.
The spicy tomato sauce is made by blending canned tomatoes with sautéed onions, brown sugar, apple vinegar, peperoncini or chili flakes, bay leaf, and peppercorns, simmered to develop a balanced sweet and tangy sauce with heat.
Serving these components together provides a comforting meal with varied textures: crispy, glazed wings; creamy potatoes; and a flavorful spicy sauce that can be drizzled liberally.
