Dark chocolate panna cotta
Description
Dark chocolate panna cotta uses a blend of milk, heavy cream, and sugar heated until just boiling, combined with vanilla extract and rich dark chocolate melted into the mix along with unsweetened cocoa powder. Gelatin softened in cold milk is stirred in to help the dessert set with a silky consistency. Straining the mixture ensures a smooth final texture without lumps.
Once poured into molds or glasses, the panna cotta is chilled for at least 4 hours to firm up. The dessert has a creamy mouthfeel balanced by the intensity of unsweetened dark chocolate and a mild sweetness that can be adjusted by sugar amount depending on chocolate used.
Serving suggestions include fresh berries, whipped cream, cocoa powder dusting, or chocolate shavings which add texture and visual appeal.
Reducing sugar is advisable if using semisweet chocolate to avoid excess sweetness.
Ingredients
- 0.5 oz unflavored gelatin 5 oz=14 grams=2 envelopes
- 2 cups milk
- 4 cups heavy cream
- ½ cup sugar adjust to taste (use less if using semisweet chocolate
- 6 oz unsweetened dark chocolate in chips or cut into small chunks
- 4 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
Garnishes:
- fresh berries whipped cream, cocoa powder, chocolate shavings
Instructions
- Put ½ cup of cold milk in a bowl and sprinkle with gelatin to soften.
- In a medium sized pot, heat the rest of the milk, the heavy cream, and the sugar until the mix starts to boil.
- Remove from the heat and add the vanilla.
- Add the dark chocolate and powdered cocoa (sift to avoid clumps), mix well and stir until dissolved.
- Gently stir in the softened gelatin mix and stir well.
- Pour the chocolate panna cotta mix through a mesh strainer, this well help remove any clumps.
- Pour the chocolate panna cotta mix into glasses or molds.
- Let the mix cool down and then refrigerate for at least 4 hours before serving.
- The dark chocolate panna cotta can be served as is, or with whipped cream, berries, powdered chocolate or chocolate shavings.
Notes
- Adjust sugar downward if substituting semisweet or sweetened dark chocolate to prevent an overly sweet dessert.
