Delicious Greek Tofu Skewers

Looking for an easy plant based dinner to grill? Try these greek tofu skewers. Tofu is marinated in a savory greek dressing overnight then grilled to perfection and topped with more green marinade. You’ll love these healthy and delicious skewers.

Ingredients
- 14 oz block extra firm tofu
Marinade
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon tomato paste
- 1 teaspoon honey
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Instructions
- Press your tofu for at least 30 minutes removing any excess water then pat dry with a paper towel. Slice into cubes big enough to place on skewers. Set aside.
- In a medium bowl, combine all the ingredients for the marinade and whisk until well combined. Set aside ¼ of the marinade in a small bowl to be used later for brushing over the tofu as it grills. Place the reserved marinade in the refrigerator.
- In a container with a lid or a bag, add the tofu and the marinade. Shake until the marinade is coating all the pieces of tofu then let marinate in the refrigerator for 2-24 hours. (I recommend letting marinate overnight)
- Place the tofu on the skewers. Preheat your grill, clean the grates, then spray the grates with cooking spray to avoid sticking. Once heated, add your greek tofu skewers to the grill. Brush with the reserved marinade and let cook with the grill covered over medium to medium high heat for 3 minutes per side. Each time you carefully flip the skewers brush more of the marinade over top until you have none left. Once done, remove from heat and set aside. Let cool and serve warm.
