Sponge
- 150 gms egg divided, 3 large
- 90 gms granulated sugar
- 40 gms all-purpose flour 1 ½ oz
- 25 gms corn starch 8 tsp
- 25 gms almond meal ¼ cup
- ½ lemon peel grated
- ½ vanilla pod
- 1 pinch salt
Lemon Cream
- 40 gms egg yolk, 2
- 40 gms sugar 1 ½ oz
- 1 lemon or 2 lemons
- 40 gms butter 1 ½ oz
Lemon Crema Pasticcera
- 180 gms milk ¾ cup
- 80 gms cream 30 gms - 3 oz. + 1 oz
- 80 gms egg yolk, 4
- 60 gms granulated sugar
- 15 gms corn starch 5 tsp
- 1 pinch salt
- 1 lemon
- 1/3 vanilla pod
Limoncello Syrup
- 30 gms water 1 oz
- 30 gms granulated sugar 1 oz
- 50 gms limoncello 1 ¾ oz
- ½ lemon
Glaze
- LEMON CREAM remaining
- lemon crema pasticcera remaining
- 60 gms milk 1/3 cup
- 125 cream whipped and lightly sweetned, ½ cup
- 30 gms limoncello 1 oz
