Deviled Avocado Eggs
Description
In Deviled Avocado Eggs, hard-boiled eggs are peeled and halved to remove yolks, which are then mashed together with ripe avocado. Lime juice adds brightness and helps slow browning. Cilantro and garlic powder contribute fresh herbal and savory notes, respectively, while salt and pepper season the mixture.
The smooth filling is spooned back into the empty egg whites, creating a creamy, vibrant appetizer. Sprinkling paprika on top brings a slight color contrast and subtle smokiness without overpowering the flavors. The filling blends the natural richness of avocado with the familiar egg yolk base, creating a delicate balance of textures.
These deviled eggs are suited for serving chilled, either as party snacks or light bites. Their appearance is enhanced by the green filling and paprika sprinkle, giving a fresh look compared to classic deviled eggs.
Because avocado oxidizes, it’s best to prepare and fill the eggs close to serving time to maintain appearance and freshness. Storage in an airtight container in the refrigerator keeps them edible for up to three days, although slight browning may occur.
Ingredients
- 3 egg cut in half, hard boiled
- 1 avocado large
- 2 teaspoon lime juice
- 1 teaspoon cilantro
- Pinch garlic powder salt and pepper
- paprika optional, for sprinkling
Instructions
- Remove the shells from the hard-boiled eggs.
- Slice the peeled eggs lengthwise and carefully remove the cooked yolks, placing the yolks in a mixing bowl.
- Add the avocado to the bowl and mash with a fork until it's a smooth consistency.
- Then add the remaining ingredients and mash stir togther until blended
- Spoon the mixture into the egg halves. Then sprinkle with paprika if desired.
Notes
- Store leftover deviled avocado eggs in an airtight container refrigerated for up to three days.
- Prepare and peel hard-boiled eggs a day ahead, but mix the avocado filling shortly before serving to prevent browning.
- Lime juice helps maintain the filling’s green color but does not fully prevent oxidation over several hours.
