  • 3 egg cut in half, hard boiled
  • 1 avocado large
  • 2 teaspoon lime juice
  • 1 teaspoon cilantro
  • Pinch garlic powder salt and pepper

Instructions

  1. Remove the shells from the hard-boiled eggs.
  2. Slice the peeled eggs lengthwise and carefully remove the cooked yolks, placing the yolks in a mixing bowl.
  3. Add the avocado to the bowl and mash with a fork until it's a smooth consistency.
  4. Then add the remaining ingredients and mash stir togther until blended
  5. Spoon the mixture into the egg halves. Then sprinkle with paprika if desired.

Notes

  • Store leftover deviled avocado eggs in an airtight container refrigerated for up to three days.
  • Prepare and peel hard-boiled eggs a day ahead, but mix the avocado filling shortly before serving to prevent browning.
  • Lime juice helps maintain the filling’s green color but does not fully prevent oxidation over several hours.
