  • 6 hard-boiled eggs peeled
  • 2 tablespoons mayonnaise
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet relish
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • paprika to taste for garnish optional

Instructions

  1. Cook the eggs the way you prefer to make hard-boiled eggs. I like to use either the stovetop method or Instant Pot for hard-boiling eggs for this recipe.
  2. Cool the eggs in a cold water ice bath for 10-15 minutes. Then peel them.
  3. Slice your eggs lengthwise down the center.
  4. Remove yolks and set them aside in a medium-sized bowl.
  5. Rinse the egg white halves to remove any yolk residue.
  6. With a fork, break the yolks up until they are crumbly.
  7. Add mayonnaise, mustard, relish, salt, and pepper to the mashed yolks and mix very well until it's a creamy texture. Use a mixer or food processor for the smoothest filling.
  8. Load the deviled egg mixture into a piping bag and gently fill each egg half with about 2 tablespoons of the blended yolk mixture.
  9. Serve the eggs cold, garnished with a sprinkle of paprika.

Notes

  • Don't overcook the eggs, or the yolks might turn a greenish color.
  • Cool the eggs in a bowl with ice water to make peeling easier.
  • Use a food processor or a mixer to avoid lumpy filling.
  • Use a pastry bag with a star tip for filling. If you don't have one, cut a corner of a sandwich bag to pipe the filling.
