Dill Carrots Recipe

These delicious dill carrots are roasted until tender then tossed in a homemade lemon dill dressing and topped with tangy feta cheese. It's an easy side dish that goes with just about anything, and it's ready in 40 minutes!

Ingredients
- 2 ½ lb carrots peeled and sliced ¼" thick
- 1 tablespoon olive oil
- ½ teaspoon EACH: garlic powder, onion powder, salt, and pepper
- ¼ cup feta cheese optional
Lemon Dill Dressing
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 2 tablespoons minced fresh dill or 2 teaspoons dried dill
Instructions
- Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Put the sliced carrots into a bowl and toss them with olive oil, garlic powder, onion powder, salt, and pepper.
- Spread the carrots out on the baking sheet and roast in the oven for 30 minutes.
- While the carrots are roasting, make the sauce. In a small bowl, whisk the olive oil, lemon juice, honey, and dijon. Mix in the chopped dill.
- When the carrots are cooked, transfer them to a serving bowl and pour the dressing over the top. Add the feta cheese and toss well. Serve right away.
