DIY Tarragon Vinegar

DIY Tarragon Vinegar is a homemade infused vinegar made by soaking fresh tarragon sprigs in cider or another white vinegar. The process develops herbal notes characteristic of tarragon which can be used in dressings, marinades, and cooking. This infusion intensifies over a couple of weeks in a sealed container.

Description

This recipe produces tarragon-infused vinegar by submerging fresh tarragon sprigs in cider vinegar or alternative clear vinegar varieties like champagne, white wine, or rice wine vinegar. The herbs can be left whole or bruised to release more flavor, then sealed in a sterilized glass container. The mixture steeps in a cool, dry place for several weeks, allowing the aromatic tarragon properties to permeate the vinegar base.

The resulting vinegar ingredient carries the clean acidity of the base vinegar enriched with anise-like herbal notes from tarragon. It enhances salad dressings, sauces, and marinades with a distinctive flavor profile. The longer steeping time increases intensity, so tasting periodically helps achieve the desired flavor balance.

Once infused, the tarragon sprigs should be removed to prevent bitterness or over-extraction. The vinegar can then be stored, refrigerated or in a cool pantry, ready to use as a culinary ingredient adding fresh herbal dimension to dishes.

  • 10 ounces cider vinegar or any white vinegar you like, such as champagne, white wine, or rice wine vinegar
  • 6 prigs tarragon fresh

Instructions

  1. Sterilize a glass bottle or jar with a tight fitting lid.  I filled mine with water and heated it in the microwave until it boiled.
  2. Rinse the tarragon and put several sprigs into the jar.  You can break up or bruise the herbs if you want to in order to bring out more of the flavor, but I just left mine as is.
  3. Fill the jar with any plain vinegar you like.  I used cider vinegar because I love the flavor.  Make sure you completely submerse the herbs.
  4. Cap or cork your bottle and set in a cool dry place for a couple of weeks.  The flavor will get stronger the longer it sits. When the flavor is as you like it, pull out the tarragon.
