Description
This salad begins with brown, seasoned ground beef simmered with taco seasoning and water until thickened and cooled. Vegetables including iceberg lettuce, red and green bell peppers, black olives, tomatoes, and green onions are combined with shredded cheddar cheese and pinto beans for a varied texture and balance of freshness and richness.
Assembled just before serving, the ground beef is added on top and the Nacho-flavored Doritos are crushed and sprinkled over the salad to add crunch and salty flavor. Catalina salad dressing is drizzled and tossed through the mixture to coat evenly. Sour cream garnish adds creaminess if desired.
The dish is best served immediately after assembling to prevent the Doritos from becoming soggy, retaining their crisp texture contrast against the moist ingredients. This makes it suitable for informal meals or gatherings where a blend of taco-inspired flavors is appreciated.
Ingredients
- 1 pound ground beef lean
- 1 ounce taco seasoning 1 packet, or 2 tablespoons homemade taco seasoning
- ⅔ cup water
- 1 head iceberg lettuce chopped into bite sized pieces
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- ½ cup black olive sliced
- 15 ounces pinto beans rinsed and drained, 1 can, canned
- 1 cup tomato diced, fresh
- ¼ cup green onion sliced
- 1 cup cheddar cheese shredded
- 10 ounces Doritos Nacho flavored
- 16 ounces Catalina salad dressing
- sour cream for garnish, optional
Instructions
- Brown the ground beef until no pink remains. Drain any fat.
- Stir in the taco seasoning packet and water. Simmer until thickened, about 5 minutes. Set aside to cool.
- In a large bowl, combine the lettuce, peppers, black olives, pinto beans, tomatoes, cheddar and green onions.
- Top with the seasoned and cooled ground beef.
- Slightly crush the Doritos and sprinkle on top. Drizzle with catalina dressing and toss to coat evenly.
- Garnish with sour cream and additional green onions is desired.
- Serve immediately.
Notes
- Toss the salad just before serving to ensure the Doritos remain crisp and don't get soggy.
