Dulce De Calabaza

Dulce De Calabaza is a traditional dessert of kabocha squash pieces slow-cooked in a sweet syrup made from piloncillo, cinnamon, and cloves. The squash softens as it simmers, absorbing the fragrant, honey-like syrup resulting in a rich, lightly spiced treat served warm or cold.

Description

This recipe uses whole piloncillo, cinnamon sticks, and cloves cooked together with water to form a sweet spiced syrup. Kabocha squash cut into large pieces is simmered in this syrup for around 1.5 to 2 hours until tender. Throughout cooking, the squash is moved to ensure thorough coating and absorption of the syrup’s flavors.

The final dish features soft, sweet squash infused with warm notes of cinnamon and clove, accented by the deep caramelized flavor of piloncillo. It can be enjoyed either warm or chilled, offering a comforting dessert with natural sweetness from the pumpkin and piloncillo.

  • 1 large piloncillo cone form
  • 4 clove whole
  • 2 medium cinnamon stick
  • ½ cup water
  • 2 pounds kabocha squash sliced into 4-inch pieces.

Instructions

  1. In a large pot, add the piloncillo, cloves, cinnamon sticks broken into pieces and water.
  2. Cook over medium heat until the piloncillo starts to soften. Break into pieces with a spoon. About 2 minutes.
  3. Place the pumpkin slices on top and cover. Bring to a simmer and cook for 1 ½ to 2 hours or until all of the pieces are soft. During this process, make sure to move the pieces around so that all of them get infused with the honey-like syrup.
  4. Serve warm or cold.

Notes

  • Wash the outside of the kabocha squash thoroughly with soap before cutting to remove impurities.
  • Stir the pumpkin slices during cooking to ensure even coating and absorption of the syrup.
  • The dish can be served warm or cold depending on preference.
