In this recipe, large eggplants are pierced and baked whole until soft, allowing the skin to blister and the flesh to develop a smoky, tender character. Ingredients
- 2 large eggplant about 1 ½ lbs
- ¼ cup tahini
- ¼ cup lemon juice fresh
- 1 clove garlic minced
- 1 tablespoon olive oil
- 3 tablespoons parsley chopped, fresh
- ½ teaspoon salt or to taste
- red pepper flakes to taste
Instructions
- Preheat oven to 400°F.
- Poke eggplant with a fork and bake until tender about 45-50 minutes.
- Cool and peel the eggplant.
- Place eggplant, tahini, lemon juice and garlic into a food processor or blender. Process until smooth.
- Stir in parsley & salt. Top with olive oil and red pepper flakes.
