  • 2 large eggplant about 1 ½ lbs
  • ¼ cup tahini
  • ¼ cup lemon juice fresh
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 3 tablespoons parsley chopped, fresh
  • ½ teaspoon salt or to taste
  • red pepper flakes to taste

Instructions

  1. Preheat oven to 400°F.
  2. Poke eggplant with a fork and bake until tender about 45-50 minutes.
  3. Cool and peel the eggplant.
  4. Place eggplant, tahini, lemon juice and garlic into a food processor or blender. Process until smooth.
  5. Stir in parsley & salt. Top with olive oil and red pepper flakes.

Notes

  • Baba Ganoush should be stored in the refrigerator and consumed within 2-3 days for best flavor and freshness.
