Ingredients

  • 10 oz. penne pasta I used Protein Plus
  • 3 medium tomatoes (650g) halved then thickly sliced
  • 6 whole garlic cloves I used frozen, make sure to peel if using fresh
  • 1 block feta cheese
  • 1 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1/2 cup reserved pasta water
  • 4 cups cooked shredded rotisserie chicken (500g)
  • Parmesan Cheese optional for serving

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9x13-inch dish with cooking spray.
  2. Arrange the tomatoes and whole garlic cloves along the edges of the dish. Place the block of feta in the middle. Drizzle the olive oil and sprinkle the italian seasoning evenly across. Then bake for 30 minutes.
  3. Meanwhile, bring a pot of water to a boil and generously salt. Add the pasta and cook according to package directions, or until al dente. Reserve 1/2 cup of pasta water then drain the rest and rinse the pasta with cool water.
  4. After 30 minutes, remove the tomatoes and feta from the oven and use a fork to stir/mash everything to combine. Then add the reserved pasta water and mix until everything is combined.
  5. Add the cooked pasta and shredded chicken and mix until evenly incorporated. Taste and add any salt or pepper to taste.
  6. Top with parmesan cheese to serve if desired and enjoy!

Notes

  • To use raw chicken: cut skinless chicken breasts or tenderloins into bite-sized pieces. Add chicken to tomatoes and garlic around the edge of the block of feta. Then bake chicken with feta and tomatoes for 30 minutes (or until chicken reaches an internal temperature of 165F).
