Description
Easy Beef Enchilada Casserole is assembled by layering a thin spread of enchilada sauce in a baking dish, followed by a mixture of ground beef cooked with enchilada sauce and shredded cheese, and corn tortillas. This layering is repeated to create a stacked casserole that is then baked covered to heat through and uncovered to melt remaining cheese on top. The corn tortillas soften during baking, melding with the beef and sauce for a cohesive texture and flavor.
The combination delivers the savory depth of beef with the tangy, mildly spiced enchilada sauce and melted cheese. Optional garnishes such as sour cream, sliced green onions, olives, avocado, or guacamole provide additional flavor and contrast in texture once served.
You can easily scale the recipe for larger families by doubling the ingredients and using a bigger dish. Preparing just before baking preserves a bit more tortilla firmness, while baking thoroughly warms the dish without drying it out.
Ingredients
- 1 lb. ground beef
- 1 ½ cups enchilada sauce divided
- 1 cup Mexican blend cheese shredded, divided
- 8 (6-inch) corn tortillas

Instructions
- Preheat oven to 350°F. Spray a 2-quart baking dish with nonstick spray.
- Spread ¼ cup of enchilada sauce in a thin layer in the bottom of the baking dish. Set aside.
- In a large skillet, cook beef until no longer pink. Drain off the excess fat, return the beef to the skillet, and stir in ¾ of the enchilada sauce and ½ cup of the cheese.
- Arrange 4 of the tortillas in the bottom of the prepared dish, tearing or overlapping them as necessary to cover the bottom.
- Top with half of the meat mixture and drizzle with ¼ cup of enchilada sauce. Repeat layers one more time.
- Cover with foil and bake for 30 minutes.
- Uncover, sprinkle with remaining ½ cup of cheese, and bake for an additional 5-10 minutes (until cheese melts and the casserole is hot and bubbly).
- Garnish with optional toppings, if desired, and serve!
Notes
- Double the recipe for larger groups and bake in a 9 x 13-inch dish.
- Tortillas will soften during baking; assembling immediately before baking retains firmer texture.
- Heat casserole until bubbly but avoid overbaking to prevent drying.
