Easy Berry Salad Recipe with Arugula and Burrata
Description
The salad brings together peppery baby arugula and thinly sliced shallots for an aromatic base. Fresh blackberries, raspberries, and strawberries are gently mixed in, providing a sweet and slightly tart contrast to the greens. A simple dressing of extra virgin olive oil, freshly squeezed lemon juice, salt, and pepper ties the flavors together without overpowering the delicate fruit.
Burrata cheese crowns the salad, its creamy texture complementing the crisp and juicy ingredients beneath. The salad’s colors and contrasts showcase bright, fresh components. It can be prepared just before serving or a short time ahead if left undressed and refrigerated, preserving freshness. Adding sliced cooked chicken, such as lemon chicken or Mediterranean grilled thighs, creates a more filling main course. This salad works well as a light lunch, appetizer, or side.
To maintain peak freshness, dress just before serving and add the burrata afterward. Store the dressing separately if preparing ahead to toss at the last moment.
