  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt sea salt
  • 1/2 teaspoon ground cinnamon
  • 2 cups banana about 4 large bananas, mashed ripe
  • 1/2 cup applesauce unsweetened
  • 3/4 cup brown sugar lightly packed, organic
  • 2 egg large
  • 1 teaspoon vanilla extract pure
  • 1/3 cup brown sugar for topping), optional, organic

Instructions

  1. Preheat the oven to 350°F. Grease a 9x5-inch loaf pan with a non-stick spray or line it with parchment paper, allowing some overhang for easy removal.
  2. In a medium-sized bowl, whisk together the whole wheat flour, baking soda, sea salt, and cinnamon.
  3. In a larger bowl, mix the mashed bananas with the unsweetened applesauce, brown sugar, eggs, and vanilla extract.
  4. Gradually fold the dry ingredients into the wet mixture.
  5. Transfer the batter into your prepared loaf pan, smoothing the top with a spatula. If you're feeling indulgent, sprinkle the additional brown sugar on top for a sweet crust.
  6. Bake for 50 to 55 minutes. When it is done, remove from the oven and let the bread cool in the pan for about 15 minutes. Then, using the parchment paper overhang, lift the bread out and transfer it to a wire rack to cool completely.
