Healthy, delicious, and satisfying, this rich and creamy Cauliflower Mac and Cheese is a scrumptious, easy-to-make, low-carb substitute for traditional macaroni and cheese.

Ingredients
- 1 medium head cauliflower
- 1 ¼ cups shredded sharp cheddar cheese
- ⅓ cup heavy cream
- ⅓ cup mascarpone cheese
- 1 tablespoon butter
- ½ teaspoon salt
- ¼ teaspoon ground black pepper

Instructions
- Wash, dry and cut your cauliflower into bite size florets and add them to a microwave safe bowl.
- Put a plate over the top and microwave 8-10 minutes or until tender. Alternatively you can roast it in the oven, but I prefer this quick and easy method for this particular recipe and I don’t have to turn the oven on.
- While the cauliflower is cooking, you can make the cheese sauce. Add the butter, heavy cream, mascarpone cheese, salt and pepper to a saucepan over medium low heat.
- Once the butter and mascarpone has melted, add in the shredded cheddar cheese and whisk until melted.
- Once the cauliflower is cooked through, remove it from the microwave and pat it dry with paper towels. It must be good and dry, to ensure the sauce sticks to each piece.
- Pour the hot cheese sauce over the top and toss to combine, making sure all of the cauliflower is well coated.
- Serve while warm and you can store leftovers in the fridge for 3-4 days in an airtight container.
Notes
- If you can't find mascarpone cheese, you can use cream cheese instead. Cream cheese has the same consistency so it makes a perfect substitute, but it's higher in carbs, so be sure to adjust your macros.
- While cheddar is classic for mac and cheese, you could substitute with Monterey Jack, Colby or a combination of both if you'd like.
