Ingredients
- 8 flatbreads see notes
Cheese and pesto
- 1/2 cup Pizza Sauce
- 2/3 cup shredded mozzarella
- 3 tbsp pesto
Zaatar
- 3 tbsp olive oil
- 1/4 cup zaatar
- 1/2 cup shredded mozzarella
Artichoke and olives
- 3 tbsp olive oil
- 2 tbsp Italian seasoning
- 2/3 cup shredded mozzarella
- 2/3 cup marinated artichoke
- 1/2 cup kalamata olives
- 1/3 red onion sliced
Margharita
- 1/2 cup Pizza Sauce
- 1/2 cup Mozzarella pearls
- 1/2 cup fresh basil loosely packed
Instructions
- Preheat the oven to 425 degrees F. Place 3 or 4 flatbreads on a large baking sheet.
Cheese and pesto
- Spread the pizza sauce on the flatbread and top with the shredded mozzarella. Spoon the pesto over the flatbread.
Zaatar
- Rub the flatbreads with olive oil and sprinkle them with zaatar. Top with shredded mozzarella.
Artichoke and olives
- Rub the olive oil over the flatbreads and season with the Italian seasoning. Top with shredded mozzarella cheese, marinated artichokes, kalamata olives and red onion.
Margharita
- Spread the pizza sauce on the flatbreads and top with mozzarella pearls. Top with basil.
Bake in the oven
- Bake the flatbread pizzas in the oven at 425 degrees for 10 to 15 minutes until the cheese is bubbling.
Notes
- You can find quality flatbread in many supermarkets these days. If not available, naan would work, too.
- Store the leftovers in an airtight container and refrigerate for up to 3 days. You can reheat them in the oven at 300 degrees F for 10 minutes or in a pan (covered) over medium heat for 10 minutes.
- For dairy free flatbread pizza, use dairy free cheese.
- If adding meat to your flatbread pizza, make sure it's fully cooked. Leftover chicken, sausage and steak work well for this recipe.
