Description
This recipe starts by removing the stems and seeds from dried guajillo and árbol chiles to control heat and bitterness. The chiles are simmered with garlic cloves, chopped onion, water, and salt until the chiles become soft and pliable, indicating they are fresh and well hydrated.
After a cooling period, the chilies and aromatics are pureed with the reserved cooking water along with additional salt, ground cumin, oregano, and black pepper to create a smooth, richly seasoned sauce. The result is a deep red sauce with warmth and slight earthiness typically used as a base or condiment in Mexican cooking.

Ingredients
- 6 guajillo chiles dried
- 3 árbol chile dried
- 1 teaspoon kosher salt
- 3 garlic peeled, cloves
- ½ onion chopped
- 4 cups water
- 1 teaspoon cumin ground
- 1 teaspoon oregano dried, Mexican
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
Instructions
- Remove the stems and seeds from the guajillo & arbol chiles.
- In a medium saucepan, add the chiles, garlic cloves, onion, 4 cups water and 1 teaspoon salt.
- Bring the water to a boil then reduce the heat to low. Simmer for about 10 minutes or until the guajillo chiles are soft.
- Remove from the heat and let it cool for 10 minutes. Reserve 1 cup of the hot water.
- In a blender, add all of the ingredients with 1 cup of the chile water. Add the other 1 teaspoon salt, the cumin, oregano and black pepper. Puree until smooth. About 2 minutes.
