Description
This tzatziki sauce relies on grated English or Persian cucumbers that are salted and pressed for about 30 minutes to extract water, ensuring the sauce doesn’t become diluted. The drained cucumber is combined with Greek yogurt or labne for creaminess, along with finely minced garlic for pungency and extra virgin olive oil for smoothness. A splash of vinegar may be added before serving to give a subtle acidity. The sauce is chilled to allow the flavors to develop fully, making it a cool and refreshing complement to Mediterranean dishes.
The texture is thick and creamy with bits of tender cucumber, while the garlicky hint and olive oil smoothness balance the natural yogurt tartness. It works well alongside grilled meats, gyros, roasted vegetables, or as a dip for pita bread.
Ingredients
- 1 English cucumber grated (or about 3 Persian cucumbers, grated)
- 1 tsp salt Kosher (or more as needed)
- 16 oz Greek yogurt or labne
- 2 tsp garlic finely minced
- 1 Tbsp extra virgin olive oil
Instructions
- Place the shredded cucumber in a colander and sprinkle with Kosher salt. Place a plate and weight on top to press out the liquid, for about half an hour.
- Drain, then squeeze the cucumber in a kitchen towel or strong paper towel to remove the rest of the liquid.
- Next, place all the ingredients in a mixing bowl, except for vinegar. Mix well, and refrigerate until ready to use. Add a splash of vinegar before serving, if desired. This sauce is best chilled for at least three hours before serving.
Notes
- Press the grated cucumbers thoroughly to avoid watery sauce and maintain thickness.
- You may peel the cucumbers if preferred, though it's not necessary.
- Optionally, add a dash or two of garlic powder or garlic salt for layered garlic flavor.
