Description

This recipe uses an Instant Pot to ferment milk inoculated with live culture yogurt and optionally sweetened or flavored. The ingredients are whisked together in the pot, then incubated for about eight hours using the machine's yogurt function. After incubation, the yogurt is chilled in the refrigerator until set and ready to eat. The process yields a smooth, slightly tangy yogurt that can be used plain or with toppings.

The flavor and texture depend on the specific yogurt starter used and any added ingredients like condensed milk or vanilla. The low-fat milk results in a lighter yogurt, and the extended incubation promotes fermentation for tanginess. Chilling after incubation firms up the yogurt.

  • 52 oz milk half a gallon approx, fat-free, Fairlife brand
  • 2 tablespoons Greek yogurt or Scandinavian Yogurt, fat-free
  • 1 can condensed milk optional, fat-free
  • 1 tablespoon vanilla bean paste optional

Instructions

  1. Remove the sealing ring of the instant pot (this step is completely optional) 
  2. Pour all the ingredients in the instant pot. Use a whisk to combine them
  3. Place the lid on the instant pot and press the YOGURT Button. The machine will work for 8 hours
  4. After the 8 hours are up, uncover, remove the inner bowl and refrigerate for 2-3 hours or until chilled
  5. Enjoy!

Notes

  • If the yogurt appears lumpy after chilling, whisk it vigorously to smooth it out.
  • Removing the Instant Pot sealing ring during incubation is optional but may help avoid pressure buildup.
