Easy Low Carb Keto Breakfast Casserole with Sausage

This savory breakfast casserole layers browned Italian sausage topped with a seasoned egg mixture containing egg whites, whole eggs, parmesan cheese, pesto, and roasted red bell pepper. Baking yields a set, puffy dish with a rich, cheesy flavor and a balance of protein and vegetables. Pine nuts and fresh basil garnish add texture and aroma.

Description

The Easy Low Carb Keto Breakfast Casserole begins by cooking Italian sausage until golden brown, then spreading it evenly in a greased baking pan. A mixture of egg whites, whole eggs, reduced sodium vegetable broth, parmesan cheese, pesto sauce, roasted red bell pepper slices, salt, and pepper is whisked together and poured over the sausage layer.

Baking at 400°F allows the eggs to puff and set, creating a firm yet tender casserole. The parmesan adds savory richness while the pesto introduces herbal and garlic notes. Red bell pepper provides a mild sweetness and color contrast.

The finished casserole can be garnished with pine nuts for crunch and fresh basil for herbal freshness. It is suitable as a low-carb breakfast or brunch option, offering a satisfying balance of protein and vegetables with simple ingredients.
