  • ¼ cup powdered sugar aka icing sugar; sifted
  • ½ cup mascarpone cheese room temperature
  • ½ teaspoon vanilla

Instructions

  1. In a medium bowl beat the cream and sugar until thick peaks appear (very thick).
  2. In a medium bowl beat (with same beaters) the mascarpone and vanilla until smooth and creamy.
  3. Add the whipped cream to the mascarpone mixture and whisk strongly until smooth. Don't over mix. Use as a topping for cakes or fresh fruit. Enjoy!

Notes

  • Drain mascarpone for approximately 15 minutes to remove excess liquid for firmer texture.
  • Prepare the cream just before serving to maintain thickness and texture.
  • Refrigerate leftovers for up to two days; thickness may decrease but flavor remains.
  • Do not freeze the mascarpone cream as it affects texture negatively.
