Easy One Pan Cauliflower Curry uses cauliflower and corn as the primary vegetables, combined with a seasoning blend of garam masala, curry powder, turmeric, and garlic puree. Ingredients

  • 1 cup vegetable stock 240ml
  • ¾ cup coconut milk 180ml, light
  • 1 ½ tsp garam masala
  • 1 tsp curry powder mild
  • 1 tsp Garlic puree
  • ½ tsp Turmeric to your taste
  • salt
  • 12 oz cauliflower florets 350g
  • 1 cup corn kernels 200g, sweet
  • 3 scallions (spring onions), sliced

Toppings

  • 2 tbsp dried cranberries optional, sweet
  • lime wedges

Instructions

  1. Preheat air fryer to 375F / 190C.
  2. In large bowl mix together all the ingredients from the coconut milk to pepper.
  3. Add in the vegetables and mix till coated.
  4. Transfer to deep dish that is at least 4 inch deep.
  5. Cook for 12-15 mins till cauliflower is cooked, mixing a couple of times during cooking.

Notes

  • Omitting dried cranberries reduces Weight Watcher Freestyle Points from 4 to 2 per serving.
  • Cooking in an air fryer requires a deep dish to contain the broth and allow even cooking of vegetables.
