  • 3 tbsp butter
  • 3-4 garlic cloves minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese make sure to use freshly grated parmesan cheese - see notes if you only have store-bought shredded cheese on hand.
  • a pinch of nutmeg optional
  • salt and pepper to taste

for the shrimp and tortellini

  • 1 tbsp olive oil
  • 1 lb large shrimp peeled and deveined
  • salt and pepper to taste
  • 1 package (about 9 oz) refrigerated cheese tortellini
  • 1 cup chicken or vegetable broth
  • 1 cup baby spinach optional
  • Lemon wedges optional for serving

Instructions

prepare the shrimp

  1. In a large skillet, heat olive oil over medium-high heat. Season the shrimp with salt and pepper.
  2. Add the shrimp to the skillet and cook for about 2-3 minutes on each side, until they are pink and opaque. Remove the shrimp from the skillet and set aside.

make the alfredo sauce

  1. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Stir in the heavy cream and bring to a gentle simmer. Reduce the heat to low and gradually whisk in the parmesan cheese until the sauce is smooth and creamy.
  3. Season the sauce with salt, pepper, and a pinch of nutmeg.

cook the tortellini

  1. Add the tortellini and chicken broth to the skillet with the alfredo sauce. Stir to combine. Cover the skillet and cook for about 5-6 minutes, stirring occasionally, until the tortellini are tender and cooked through.

combine and serve

  1. Return the cooked shrimp to the skillet, along with the baby spinach if using. Stir everything together until the shrimp are heated through and the spinach is wilted. Serve with lemon wedges on the side of an extra burst of flavor.
