Easy Sausage and Egg Breakfast Casserole with Bread Cubes
Description
Easy Sausage and Egg Breakfast Casserole with Bread Cubes features a mixture of cooked breakfast sausage blended with eggs, milk, cheddar cheese, kosher salt, and dried parsley. Cubed slices of Italian or Ciabatta bread are folded in to provide a tender, egg-soaked interior with a gently crisp crust once baked. The dish is baked in a moderately heated oven until the egg is fully cooked and set. This creates a rich, creamy texture with bursts of savory sausage and melted cheese throughout. The parsley adds a subtle herbaceous note.
The casserole is practical for weekend breakfasts or brunch, as it can be served straight from the oven or at room temperature. It pairs well with fresh fruit or simple greens to balance the richness.
For best results when preparing ahead, cook the sausage and cut the bread in advance. Mix the egg, milk, cheese, and seasonings just before combining with bread and sausage to preserve the bread's texture and maintain a crunchy top after baking.
Ingredients
- 10 oz breakfast sausage we prefer Jones Dairy Farm pork sausage

- ½ cup milk
- 1 cup cheddar cheese shredded
- ½ tsp kosher salt
- 1 tsp parsley dried
- 4 oz Italian or Ciabatta bread , cut into 1/2 inch cubes

- Add cheese into egg mixture and stir in.

Notes
- Prepare sausage, cut bread, and mix dairy and eggs ahead, then combine all ingredients immediately before baking to prevent the bread from becoming soggy.
- Baking until eggs are set ensures the casserole holds its structure and offers a slightly crisp top layer.
- Serving can be done hot or at room temperature depending on preference and timing.
