Easy & Simple Sesame Nori Fries

Easy & Simple Sesame Nori Fries are potato sticks seasoned with garlic and onion powders, baked or fried until golden and tender, then topped with sesame oil, sesame seeds, and thin strips of seaweed for a savory twist. Served with a garlic aioli dip, this recipe combines crispy fries with umami-rich nori and toasted sesame accents.

Description

This recipe begins with peeling and drying potatoes, then cutting them into sticks roughly ½-inch thick and 2 inches long. The potato sticks are seasoned with vegetable oil, garlic powder, onion powder, and salt by hand. They can then be cooked by baking at 450°F for about 35 minutes until golden and fork-tender—flipping halfway—or deep-fried in vegetable oil at 350°F until crisp and golden.

After cooking, the fries are finished with a drizzle of sesame oil, a sprinkle of sesame seeds, and shredded seaweed snack strips (nori), adding a contrasting texture and a savory, marine flavor. The garlic aioli dip made from mayonnaise, lemon juice, and finely grated garlic adds creamy, tangy, and pungent notes.

This dish works well as a snack or side, offering a mix of crispy and tender textures with distinctive flavors from the nori and sesame. The garlic aioli complements the fries with its bright and garlicky character. It can be served hot to maintain the fries' texture and topped just before serving.

Ingredients

Servings

For the Fries

  • 8 medium potato or yellow russet potatoes, Yukon gold variety
  • 1 tablespoon vegetable oil or any neutral oil to season fries
  • 1 teaspoon garlic powder not garlic salt!
  • 1 tsp onion powder
  • ¾ teaspoon salt

Toppings

  • 1.5 teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • 6 heets seaweed snack cut into thin strips with scissors, or sub with ⅓ cup of Korean seasoned seaweed flakes

For the Garlic Aioli Dip:

  • ½ cup mayonnaise or regular mayonnaise, Japanese style
  • ¾ tablespoon lemon juice freshly squeezed
  • 1 clove garlic finely grated

Instructions

  1. Peel the potatoes and rinse them off with cold running water. Dry them each with clean paper towels to remove as much excess moisture.
  2. Slice peeled potatoes into ½-inch thick x 2-inch long sticks. Transfer potato sticks to a large mixing bowl and season with vegetable oil, garlic powder, onion powder, and salt. Massage the seasoning into the potatoes with clean hands.
  3. Choose ONE potato cooking method below:To Bake: Preheat the oven to 450 degrees F. Spread the potato sticks into a single layer without any overlap on the lined baking sheet, giving each piece enough space. Bake on the middle rack for 35 minutes in total or golden brown and fork tender, flipping the fries over half way with a spatula. To Deep Fry: Heat 3 cups of 750 ml of vegetable oil in a large pan on medium heat, around 350 F with a digital instant read thermometer. Fry seasoned potato sticks in small batches until golden brown, flipping over halfway. Remove fries with a slotted spoon and transfer to a wire rack or paper towel lined plate to drain off excess oil.To Air Fry: Preheat the air fryer to 400 degrees F. Lightly spray the air fryer basket with vegetable oil. Place the seasoned fries in a single layer without any overlap so there's enough space between each fry. You will need to air fry in small batches. Air fry for 14-18 minutes, flipping over halfway, until they are crispy and golden brown. If they're not golden brown, air fry for another few minutes until they are.
  4. Transfer fries to a large mixing bowl. Season the fries with sesame oil, sesame seeds, seaweed snack and toss until fries are evenly coated.
  5. To make the garlic aioli: in a small bowl combine Japanese mayo, finely grated garlic, and lemon juice. Serve with fries and enjoy!
