Ingredients
- 1+ 1/4 cup all purpose white flour
- 2.5 g baking soda 1 tsp
- 1/3 cup unsalted butter at room temperature
- 1/3 cup white sugar
- 1/2 cup brown sugar
- 5 dops vanilla extract
- 1 large egg
- 3/4 cup chocolate chips
- 8-10 marshmallows
- 1/2 cup blended chocolate crackers or chocolate Graham cracker crumbs
- pinch of salt

Instructions
- Preheat oven to 350°F (175°C) and line a large cookie sheet with parchment paper.
- In a large bowl, beat together the butter, white sugar, and brown sugar with a hand or a stand mixer until the mixture the sugar mixture becomes creamy.
- Crack in the egg and add 5 drops of vanilla extract. Give it a good mix.
- Using a rolling pin crush graham cracker pieces into fine crumbs.
- Gradually add the dry ingredients: flour, baking soda, graham cracker crumble, and salt. Add chocolate chips. Mix with a wooden spoon. Don't over-mix.
- Form cookie dough balls and arrange them on the baking sheet, you can use a cookie scoop. Make the balls into huge cookies (just like the massive s'mores Crumbl cookies) or into smaller cookies (for a bite-sized experience).
- Bake these goodies for 10-12 minutes until they're golden brown and irresistible.
- Once the cookies are out of the oven, place a couple of marshmallows on top of each cookie. Burn the top of the marshmallows with a blow torch. Alternatively, turn the broiler on setting on high, and return the cookies to the oven for 1-2 minutes until the marshmallows are lightly brown.
- Drizzle melted white chocolate on top. This adds an elegant touch and enhances the flavor.
Notes
- TIP! To keep them soft and chewy, you can place a slice of bread or a marshmallow in the container.
- Storage: Keep the cookies in an airtight container at room temperature for up to 5 days.
- Make Ahead: They also freeze well. So you can bake a double batch and keep it in the freezer for up to 3 months.
