Easy Spinach & Tomato Breakfast Casserole

This breakfast casserole blends eggs, cottage cheese, spinach, roasted tomato, mozzarella, and flour into a baked dish with a custard-like texture. It produces 12 portions with a tender interior featuring fresh vegetable flavor and mild cheese richness. The recipe offers flexibility for topping with avocado, salsa, or sour cream for added flavor and texture variety.

Description

The Easy Spinach & Tomato Breakfast Casserole begins by combining beaten eggs with melted butter and flour to form a base. Chopped fresh spinach and roasted tomatoes add freshness and slight sweetness, balanced by the creamy texture of small curd cottage cheese and shredded mozzarella. Salt seasons the mixture before baking in a greased pan to create a firm but tender custard-like bake.

Baked first at a higher temperature to set the dish and then lowered to cook through evenly, the casserole develops a gently browned surface while retaining a moist interior. Upon resting, it firms enough to slice into twelve portions, making it suitable for group breakfasts or meal prep.

The recipe allows customizable toppings like avocado, salsa, extra mozzarella, sour cream, or fresh chives to complement the mild flavors. These additions provide varied flavor notes and textures upon serving, catering to personal preference.
