  • ¾ cup rolled oats
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon baking powder
  • 1 pinch salt
  • 1 teaspoon pure vanilla extract
  • ½ cup butter 1 stick, melted*

For the Strawberry Filling:

  • 2 pounds ripe strawberries hulled and sliced
  • ¼ cup cornstarch arrowroot, or all-purpose flour
  • ¼ cup white sugar adjust based on the sweetness of strawberries
  • 1 tablespoon orange juice
  • Zest of 1 orange optional

Instructions

  1.  Preheat your oven to 350°F (180°C).
  2. Prepare the Strawberry Filling: In a bowl, combine sliced strawberries, orange zest, cornstarch, sugar, orange juice, and vanilla extract. Mix well until the strawberries are coated evenly.
  3. Make the Crumble Topping: In a separate bowl, mix rolled oats, all-purpose flour, brown sugar, baking powder, vanilla, and a pinch of salt. Mix to combine. 
  4. Pour the melted butter over the dry ingredients and mix to combine.
  5. Assemble the Crumble: Pour the strawberry filling into a greased baking dish, spreading it evenly on the bottom of the dish. Sprinkle the topping mixture evenly over the strawberries, covering the entire surface. 
  6. Bake in the preheated oven for 30-40 minutes or until the topping is golden brown and the strawberry filling is bubbly.
  7. Serve: Allow the strawberry crumble to cool for a few minutes before serving.
  8. Serve warm with a big scoop of vanilla ice cream or a dollop of whipped cream, if desired.

Notes

  • *Use Cold Butter if you prefer a crumbly texture for the topping, use cold butter and cut it into the dry ingredients with a pastry cutter until you achieve a crumb-like consistency.
