Bake these yummy Strawberry Crumble Bars for the ultimate summer dessert! These bars are made with a buttery shortbread crust, sweet gooey filling, and crumbly topping. They are delicious served warm with a scoop of vanilla ice cream!

Ingredients
Shortbread Crust
- 2 ¾ cups gluten free flour
- 1 cup melted unsalted butter
- ½ tsp baking powder
- ½ cup pure maple syrup
- 1 tsp vanilla extract
Filling
- 3 cups fresh strawberries or blueberries and raspberries
- 3 tbsp tapioca flour
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp pure maple syrup

Instructions
- First, set your oven to 375 degrees Fahrenheit to heat up. Then, cover a 9-inch square pan with parchment paper.
- Start by making the shortbread crust. Mix all the crust ingredients in a bowl. Stir until the mixture looks like cookie dough.
- Press ¾ of this mixture evenly into the lined pan. Save the remaining ¼ for the topping. Use a fork to poke holes in the crust.
- Bake the crust for 8 minutes. Then, take it out of the oven.
- In a clean bowl, mix all the filling ingredients. For a smoother texture, mash the berries. Stir until everything is well combined.
- Pour the fruit mixture into the pan. Spread it out into an even layer.
- Sprinkle the remaining crust mixture on top of the fruit.
- Bake for 32 to 36 minutes, or until the topping is lightly golden brown and the filling is bubbly around the edges.
- Take it out of the oven. Let it cool in the pan for 1 hour, then carefully move it to a wire rack to cool completely.
- Finally, once completely cooled, cut into bars and enjoy!
Notes
- If you are not gluten free, feel free to use regular all purpose flour.
- If necessary, use honey instead of pure maple syrup.
- The crust dough should resemble classic sugar cookie dough.
- Feel free to use a combination of fresh berries for the filling.
- These bars are done baking when the filling is a little bubbly and the topping is slightly golden brown.
- Allow the strawberry crumble bars to fully cool before slicing.
