This vegan Thai pizza recipe really hits the spot. A savory peanut sauce, instead of the traditional red sauce, with the flavors of coconut milk and agave for just the right amount of sweetness. This vegan pizza recipe creates a winning fusion of flavors to elevate your next pizza night!

Ingredients
- 1 Pre-made Pizza Dough
For the Sauce:
- ⅓ cup of crunchy peanut butter
- ¼ cup of coconut milk plus 2 Tablespoons
- 2 Tablespoons of soy sauce
- 3 large garlic cloves
- 1 teaspoon of grated ginger
- 1 Tablespoon of agave
- 1 Tablespoon of lime juice
For The Pizza:
- 6 ounces of tofu cut into small cubes or triangles
- ½ cup of chopped pineapple
- ½ cup of chopped cilantro, divided
- ½ cup of carrots chopped into tiny matchsticks
- 1 green onion chopped
Instructions
- Prepare pizza crust according to package instructions.
- For the sauce, add all ingredients and tofu into a pot and stir together under the lowest heat. Cook for 4 to 5 minutes.
- Top the pizza crust with the sauce and tofu and add all toppings, reserving 1/4 cup of cilantro.
- Bake until the pizza crust is golden brown. Mine baked for 20 minutes. Once it's done, top with remaining cilantro.

Notes
- Use crunchy peanut butter: For more texture than creamy.
- For meal prep: When making the sauce in advance, heat it before adding it to the crust to bake.
- Make it spicy: If you like your Thai flavors with a little spice, add a bit of Sriracha, red pepper flakes, or diced fresh chili to the sauce or simply drizzle it over the top just before serving.
- Use a pizza stone: If you have one this makes an ultra-crispy crust!
